Peaches and Honey

20130904-174158.jpg I'm going to jump on the bandwagon here and tell you all how I'm trying to soak up the last few weeks of summertime {I know everyone is tired of hearing that, but it's true}! Last week after a small shopping spree in the backyard of Hobson's parents' house, we had a couple of peaches sitting around in the kitchen, and, well, peaches and summer go hand-in-hand. So with Labor Day past us, I thought it was about time to use them. I didn't have enough for a pie, and I wanted to do something fun with them {besides just eat them over the sink}. So I chopped the peaches up for dinner, threw them in the frying pan for a bit, added some spinach, slices of a Chinese eggplant {thanks, Siobhan!}, chopped fresh parsley, and honey. Yes, honey! Now what person doesn't want their dinner to consist of peaches and honey? It's healthy, so sweet and the perfect recipe for a late summer meal.
